Bar-B-Que Beef Stew
2 lbs. stew meat
3 tbsp. oil
1 c. onion, sliced
1/2 c. green pepper, chopped
1 lg. clove garlic
1/2 tsp. salt
1/8 tsp. pepper
2 c. beef stock
1 can (8 oz.) tomatoes
1 can (4 oz.) mushrooms
1/3 c. barbecue sauce
3 tbsp. cornstarch
1/4 c. cold water
Saute onion, pepper and garlic in oil. Add salt, pepper, beef stock, tomatoes, mushrooms and barbecue sauce. Cook in slow cooker/Crock Pot on low heat 8-10 hours. Mix cornstarch, cold water and thicken before serving. Serve over hot cooked rice.
Beef n' Potato Stew
2 to 2 1/2 pounds very lean beef stew meat
2 tablespoons bacon drippings or shortening
2 large onions, diced
5 large potatoes, cut in eighths
4 or 5 large carrots, cut in 2-inch slices
Salt and pepper to taste
Garlic flakes or garlic salt (optional)
Diced celery (optional)
1 can condensed tomato soup
Brown stew meat in bacon drippings or shortening. Add diced onions and cook until browned. Add meat & onions, vegetables, seasonings, soup and a soup can of water to the crock. Cook on LOW all day - HIGH half a day. Add more water as needed. Serve with a hearty bread like french or Italian.
Cranberry Turkey in a Slow Cooker
One thawed turkey breast (you can use frozen)
1 envelope Lipton onion soup mix (I used the herb one)
1 can cranberry sauce
Place the turkey in the Crock Pot. Mix together cranberry sauce and soup mix and pour over turkey.Cook on high for 2 hrs., then on low for 7 hrs. If you use frozen, cook on high for 2 hrs., then on low for 10 hrs. or more.
How about a heart-smart crock pot recipe?
Ground Turkey Sloppy Joes
2 pounds ground turkey
2 medium onions, chopped
2 cans (15 oz) tomato sauce
1 can (6 oz) tomato paste
1/2 cup brown sugar (firmly packed)
1/3 cup red wine or cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons liquid smoke
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
Brown turkey with onions over medium-high heat about 6 to 8 minutes. Drain. Transfer the turkey and onions to a Crock Pot. Stir in the remaining ingredients.Cover and cook on low 6 to 7 hours. Serve on rolls or sliced bread. Serves 8.
Broccoli and Rice Chicken
2 pounds chicken tenders or boneless breasts cut in strips
1 1/4 cups uncooked converted rice
1 package Knorr's Cream of Broccoli Soup Mix
1 1/2 cups chicken broth
pepper, to taste
Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.
Cheesy Crockpot Chicken
Almost too easy, the chicken cooks in a creamy, cheesy sauce that is delicious
over noodles. This freezes well, too.
2 pounds boneless, skinless chicken
breasts
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup
1/4 teaspoon garlic powder
Place chicken breasts in the Crockpot. Mix the undiluted soups together with the
garlic powder and pour over chicken. Cover and cook on low 6 to 8 hours, until
chicken is tender. Serve with the delicious sauce over rice or noodles. Yield: 8
servings
Mexican Crockpot Turkey
This next idea is from a reader, Ed Hawley. Ed, send me your snail mail address
and I will mail you out the first copy of my mini-cookbook.
I take two turkey hindquarters, a little salt and pepper, a package of fahita
mix, Taco mix, spaghetti mix, or anything you want to try, and a can of
tomatoes.
Put it all in the slowcooker, on low, in the morning before going to work and it
is done when I get home. Then I fix a couple cups of rice, make gravy out of the
juice in the slow cooker and dinner is ready.
Hey, it gives my wife and I two meals and it is real tasty and CHEAP.
(You could certainly substitute other meats and still have an inexpensive meal.)
Crockpot Recipes:
Crock Pot Pork Chops
Take about 4-5 bone-in pork chops*
Flour them and then put them in a skillet to brown both sides (you do not cook
them all you do is brown the outside)**
Take them out of the skillet and put them in a crock pot
Add 2 cans of Campbell's Chicken and Stars soup
Turn the crock pot on low and let it cook for about 6 hours (you can cook it for
about 4 hours but the longer it cooks the more tender the pork chops are)
About 20 minutes before the pork chops are ready prepare some Stove Top Dressing
as directed on the box
When it is finished cooking you add the dressing to the crock pot, stir and let
it sit for about 10 minutes
The dressing will soak up the juices from the pork chops and the soup If you
feel the pork chops or dressing is too dry, you can add a little bit of water at
any time
After the dressing has been in the crock pot for about 10 minutes it is ready to
be served
Note: my mom always likes to serve this with mixed vegetables but you can make a
meal of this without anything else
*I prefer boneless, butterfly pork chops
**I usually skip this part and just put the pork chops in the crock pot; I
haven't really noticed that it alters the taste any.
Crockpot Meal
Start with a piece of meat. Beef, pork, chicken (it doesn't matter)
place in your crockpot with
1 can condensed mushroom soup
1 chopped onion or package dried onion soup mix
I usually add garlic powder as well (optional)
1/2 to 1 can of water
carrots and potatoes (scrubbed and cut into chunks/ peelings on)
Set your crock pot to low
Let cook for a minimum of 3-4 hrs or come home 8 or 9 hrs later from work
Using chopped onion instead of dried onion soup reduces the salt in the recipe.
Using skinned poultry and lean meat reduces the fat in the recipe.
Add a small green salad and dinner is ready.
How about a quick crock pot recipe? This one is very very easy.
In a crock pot, layer chicken (Any pieces. I usually use the cheapest available,
although boneless chicken breasts, make it a little fancier.)
Sliced onion
Sliced potatoes
Sliced green pepper
1 lb. pkg. of baby carrots
1/2 tsp. or garlic powder (or to taste. I use more)
1 can cream of mushroom soup
1 can of water
Set temp on lo. Come back 4 or more hrs later and dinner is ready.
It doesn't get much easier than that.
Italian Dressing Crockpot Chicken
4-6 chicken breasts
1/4 C white wine
1 pkg. dry Italian salad dressing mix
Brown chicken in skillet.
Place chicken in Crockpot&nbsP;
Sprinkle dry salad dressing mix over chicken
Add wine Cook for about 4 hr. on high
(I haven't tried this one yet, but I'll bet if you add about a 1/2 cup of water,
you can increase cooking time and put it on low for 6-8 hrs)
Crockpot Beef Stroganoff
2 lb. of lean beef cut into cubes
about 2 dozen small mushrooms or larger mushrooms sliced, or a couple small cans
of sliced mushrooms.
1 can cream of mushroom soup
1 16 oz carton of sour cream
3 oz of cream cheese
Worcestershire sauce
salt and pepper to taste
Place beef in bottom of Crockpot
Salt and pepper&nbsP;
place soup on top of beef
place mushrooms on top of soup
add enough Worcestershire sauce to coat mushrooms
Cook on low for about 10 hrs.
Add sour cream and cream cheese during last 30 minutes
Add a couple tbs. of cornstarch mixed with just a little water, to thicken sauce
during the last 30 minutes.
Serve over rice or noodles. Add a salad and dessert and dinner is ready!
Crockpot Italian Chicken
About 2 lb. of chicken (boneless chicken breasts recommended)
1 pkg. dry Italian spaghetti sauce mix
1 sm. can diced tomatoes (15 oz.)
1 sm. can tomato sauce (8 oz.)
Place the chicken in the crock, sprinkle with the dry mix
Add the can of tomatoes and the can of tomato sauce
Cook on low all day (7-9 hr.)
Or on high 3 1/2 to 4 1/2 hrs
Serve with pasta and Parmesan cheese and garlic bread.
Hawaiian Chicken
About 3 lb. of chicken parts
salt and pepper to taste
1/2 C soy sauce&nbsP;
1/2 C chopped green onions
1/2 C honey
1 can chunk pineapple
Sprinkle chicken with salt and pepper and place in Crockpot. Combine soy sauce,
pineapple with juice, and green onion and pour over chicken.
Cover and cook on low for about 7 hr.
Serve with rice.
Crockpot Caramel Apple Topping
2 medium apples (cored, peeled and cut into about 8 pieces)
1/2 C apple juice
7 oz. of caramels
1 tsp. of vanilla
1/8 tsp. of cardamom&nbsP;
1/2 tsp. of cinnamon
1/3 C of creamy peanut butter
Combine apple juice, caramels, vanilla and spices
Drop tsp. of peanut butter over those ingredients. Then stir.
Add apple wedges and cook on lo for 5 hrs.
Stir thoroughly and cook (still on lo) for an additional hour.
Serve approx. 1/3 cup over angel food cake or a dish of vanilla ice cream.
Approx. 7 servings.
YUM!!!!
Crockpot Chocolate Peanutbutter Cake
2 C Chocolate cake mix
1/2 C water
1/3 C creamy peanut butter
1/2 C chopped nuts
Combine all ingredients in one bowl and mix well. Beat about 2 minutes.
Pour batter into well greased and floured 2 lb. coffee can.
Cover top of can with 8 paper towels.
Cover Crockpot and bake on high for 2-3 hrs.
Doesn't get much easier than that!
Cola Chicken
1 whole chicken (1 1/2 lb to 2 1/2 LB)
1 C ketchup
1 large onion thinly sliced
1 C of Coke or Pepsi or other cola drink
Wash and pat chicken dry&nbsP;
Salt and pepper to taste
Put chicken in Crockpot with the onions on top
Add cola and ketchup
Cook on low for 6 to 8 hr.
Creamy Dijon Chicken
4 to 6 boneless chicken breasts
1 pkg. Dijon mustard sauce mix
1 can cream of mushroom soup
Combine all ingredients in Crockpot
Cover and cook on low 6-8 hr.
Italian Chicken with Potatoes
4 pieces of chicken (it calls for boneless breasts, but I use whatever I
have)
1 C. Italian salad dressing
2 tsp. seasoning (or mix basil, oregano, crushed red pepper, and garlic powder
to equal 2 tsp.
1 C grated Parmesan or Romano cheese
6-8 potatoes cut into wedges
Place chicken in Crockpot. Sprinkle with 1/2 of Italian dressing, herbs, and
cheese. layer in potatoes.
Add remaining dressing, herbs, and cheese.
Cook on low 6-8 hrs or until chicken and potatoes are tender.
Serves 4
Cowboy Casserole
1 lg. onion chopped
1 1/2 lb. ground chuck, browned and drained
6 med. potatoes sliced
1 can red beans
1 can of tomatoes mixed with 2 tbs. flour or&nbsP;
1 can of tomato soup
salt & pepper
garlic to taste
Layer chopped onion, ground beef, sliced potatoes and beans in Crockpot
Add tomatoes or soup, over the top.
Season with S & P and garlic to taste
Cook on lo 7 to 9 hrs.
Serves 4-5
Hash Brown Dinner
1 to 1 1/2 lb. ground chuck browned and drained
1 medium onion chopped
1 envelope brown gravy mix
1 can creamed corn
1 1/2 C shredded cheddar cheese
1 pkg. (1 lb.) frozen hash brown potatoes slightly thawed
1 can cream celery, mushroom, or chicken soup
1/2 can evaporated milk
S & P to taste
Place ground beef and onion in Crockpot.
Toss with brown gravy mix
Pour cream corn over meat mixture
Add 1/2 the cheese
Top with hash browns and remaining cheese
Mix evaporated milk and soup--pour over hash browns
Cook on low for 6-8 hrs or high for 3 1/2 to 4 hrs Serves 4
If using 5 qt or larger Crockpot, may increase meat to 2 lb. and hash browns to
2 lb..
Serves 6 to 8
Autumn Pork Roast (for the
Crockpot)
3-4 LB pork roast
salt and pepper
1 C. of cranberries finely chopped
1/4 C. honey
1 tsp. grated orange peel&nbsP;
1/8 tsp. each ground cloves and ground nutmeg
Sprinkle roast with S&P Place in Crockpot
Combine remaining ingredients and pour over the roast.
Cook on low for 8-10 hrs or high for 4-5 hrs.
Makes 6-8 servings.
Crockpot Country Pork Chops
4 pork chops (I use Iowa chops)
1 clove of garlic (chopped)
salt and pepper to taste
4 medium potatoes (sliced. I just scrub and slice, leaving skins on)
2 med slice onions
1 1/2 C. sour cream
1 1/2 tsp. salt&nbsP;
1/2 tsp. of dry mustard
Trim any excess fat from chops. Roll in flour and then brown in a skillet in
just a little oil along with the garlic. Season.
Layer potatoes, onions and chops in Crockpot.
Blend sour cream, salt and mustard. Pour over contents of Crockpot.
Cook on low 4-6 hrs.
